Bruschetta & Kale Pesto Chips

Naturally gluten-free and made with wholesome ingredients, this recipe is an easy way to elevate snack time, holiday gatherings, or summer parties.

Ingredients for Bruschetta & Kale Pesto Chips:

Brown Rice Tortillas– These tortillas bake into perfectly crisp chips that provide a sturdy, gluten-free base for the fresh bruschetta and creamy pesto. The crunch they provide in this snack is EVERYTHING.

Tomatoes– Fresh tomatoes add juicy sweetness and vibrant color, creating the classic foundation of any great bruschetta.

Red Onion– Finely diced red onion brings a mild bite and subtle sweetness that balances the tomatoes and feta.

Fresh Basil– We looooove basil around here! Basil adds its signature fresh, aromatic flavor that pairs beautifully with the tomatoes and olive oil. Yum!

Garlic– Garlic is divided between the bruschetta and pesto, adding savory depth and enhancing every layer of flavor.

Extra Virgin Olive Oil– A quality extra virgin olive oil ties everything together, adding richness to both the bruschetta mixture and the homemade pesto.

Balsamic Vinegar– This vinegar provides a touch of sweetness and acidity that brightens the tomato mixture and enhances its fresh flavors.

Feta Cheese– Totally optional, the crumbled feta adds a creamy texture and tangy, salty finish that complements the fresh vegetables really well.

Sea Salt & Black Pepper– Simple seasonings that bring out the natural flavors of each ingredient without overpowering them.

Ingredients:

  • 4 Brown Rice Tortilla
  • 6 Tomatoes (finely diced)
  • 1/4 cup Red Onion (finely diced)
  • 1/2 cup Basil Leaves (finely chopped)
  • 2 Garlic (clove, minced and divided)
  • 1/3 cup Extra Virgin Olive Oil (divided)
  • 1 tbsp Balsamic Vinegar
  • 1/2 cup Feta Cheese (crumbled)
  • Sea Salt & Black Pepper (to taste)
  • 3 cups Kale Leaves
  • 1/2 cup Walnuts
  • 1/2 Lemon (juiced)

Directions:

  1. Preheat the oven to 415ºF (213ºC).
  2. Defrost the brown rice tortillas and slice them into 1/8’s using a pizza cutter. Line them on a large baking sheet and bake for 6 minutes. Remove from oven and set aside.
  3. Create your bruschetta mix by combining tomato, red onion, half your minced garlic, basil, a splash of your olive oil, balsamic vinegar, feta, salt and pepper in a mixing bowl. Toss well and let marinate in the fridge until ready to eat.
  4. Create your kale pesto by combining kale, walnuts, remaining garlic, remaining olive oil, salt, pepper and lemon juice in a food processor or blender. Pulse until a pesto-consistency forms.
  5. When ready to serve, spoon a dollop of pesto onto each brown rice chip and top with a spoonful of the bruschetta mix. Arrange on a platter or cutting board. Enjoy!
