
Sometimes the simplest ingredients create the most memorable meals. Potatoes, a handful of spices, and fresh herbs come together in this recipe to make crispy, golden bites that are packed with flavor. The creamy, tangy green sauce adds just the right amount of freshness, making every bite a delicious balance of warm spices and bright herbs. It’s a recipe that’s easy enough for weeknights but impressive enough to serve to guests.

Ingredients for Spiced Potato Patties & Green Sauce:
Potatoes- These are the foundation of this recipe, becoming crispy on the outside and fluffy on the inside in the air fryer. Russet potatoes work really well as they naturally absorb flavors and will crisp up beautifully.

Extra Virgin Olive Oil- Instead of adding butter into our mashed potatoes we use a little bit of EVOO as it slightly adds a different flavor while also being a healthier choice.
Chives- These add a mild onion flavor that complements the warm spices without overpowering the dish. They also bring a fresh pop of color to our potato mixture.

Garam Masala- Garam masala is a fragrant Indian spice blend that gives the potatoes their warm, earthy, and slightly sweet flavor. It typically contains spices like cumin, coriander, cinnamon, cloves, and cardamom. I use a pre-made spice blend, but you can look for a recipe and make your own too.
Oat Flour- Naturally gluten free and containing more beneficial health properties than white unbleached flour, we use oat flour to mix with our mashed potatoes to form a dough like consistency. This helps hold our potato patties together.
Cilantro- Fresh cilantro forms the base of the vibrant green sauce, adding a bright, citrusy flavor that balances the warm spices on the potatoes.
Mint Leaves- These leaves give the green sauce a refreshing, cooling taste that pairs perfectly with the spiced potatoes.

Lime Juice- This adds acidity and brightness, enhancing the flavors of the herbs while balancing the richness of the potatoes.
Green Chili Pepper- This pepper provides a fresh, spicy kick to the sauce. Adjust the amount based on your preferred level of heat, or remove the seeds for a milder flavor.

Ginger- Fresh ginger adds a warm, zesty flavor that complements both the herbs and spices while giving the sauce extra depth. Be careful not to overdo it on the ginger, it can easily overpower other flavors and make the sauce a bit spicy.
Water- A small amount of water helps blend the green sauce into a smooth, pourable consistency. Add it gradually until the sauce reaches your desired thickness.

Ingredients:
- 3 Russet Potato (medium, peeled, quartered)
- 1/4 cup Extra Virgin Olive Oil (divided)
- 1 tbsp Chives (finely chopped)
- 2 tsps Garam Masala
- 1/3 cup Oat Flour (plus more if needed)
- Sea Salt & Black Pepper (to taste)
- 1 cup Cilantro
- 1 cup Mint Leaves (chopped)
- 2 tbsps Lime Juice
- 2 Green Chili Pepper (seeded, roughly chopped)
- 1 tbsp Ginger (fresh, grated)
- 1/4 cup Water (or as needed)

Directions:
- Add the potatoes to a large pot of salted water and bring to a boil. Boil for 15 minutes or until the potatoes are fork-tender. Drain well and return to the pot. Add half of the oil. Mash until smooth. Transfer to a large mixing bowl.
- Add the chives, garam masala, and flour to the bowl. Season with salt and pepper. Mix until fully combined. The mixture should be slightly firm and not sticky. If it feels too moist, add more flour, a teaspoon at a time.
- Divide the mixture and shape into patties about 3 1/2 inches (9 cm) wide. Place on a tray and refrigerate for 15 minutes until firm.
- Meanwhile, add the cilantro, mint, remaining oil, lime juice, green chilies, ginger, and water to a small food processor or blender. Season with salt and pepper. Blend until smooth adding more water if needed to reach your desired consistency.
- Preheat the air fryer to 400ºF (205ºC). Arrange the patties in the basket in a single layer. Cook for 15 to 18 minutes until golden brown and cripy, flipping halfway through.
- Let the patties rest for two to three minutes before serving to help them set. Serve with the green sauce and enjoy!

Notes:
- Leftovers- Refrigerate in an airtight container for up to three days. Freeze for up to three months.
- Serving Size- One serving is two patties with 1/4 cup of sauce.
